Honey Garlic Stir Fry

•Dairy free, Gluten free option, Sesame free, Nut free, Egg free•

Ingredients: Makes 4 servings
1lb chicken breast cut into 1” pieces
2 C Broccoli florets cut small
1 C Thinly sliced carrots
2 tbsp Vegetable oil
3-4 Cloves garlic, minced
1/4 C chicken broth, I use low sodium Kitchen Basics
1/4 C Tamari (gluten free) or soy sauce
3 tbsp honey
2 tsp cornstarch or arrowroot powder
Salt & Pepper

**Optional side: Rice, riced cauliflower or potato

Directions:
1. In a skillet heat 1 tbsp oil and add the broccoli and carrots. Cook for about 4-5 minutes and then add 1/4 C water. Cook until the water evaporates (about 2-3 minutes) set the vegetables aside
2. In the same pan add another tbsp oil and the diced chicken. Season with salt and pepper. Cook for about 4 minutes each side until golden brown.
3. Add the garlic and cook for 30 seconds stirring often to prevent the garlic from burning.
4. Add the veggies back into the pan.
5. Add the broth, soy sauce/tamari, corn starch and honey. Mix well so the chicken and vegetables are coated in the sauce.
6. Allow the sauce to simmer and thicken about 2-3 minutes. Serve immediately
