Gut Healthy Cookie Dough Bites

If you’re craving something sweet but want to keep it healthy, these gut-friendly cookie dough bites are the perfect solution. Packed with fiber, probiotics, and wholesome ingredients, they’re not only delicious but also beneficial for your digestive health.

Version 1: Makes about 14 balls, 7 servings
1/3 C Granola butter or sun butter or nut butter of your choice
3 tbsp maple syrup
1/2 tsp vanilla
1 tbsp milk of your choice I used oat milk ( Pacific foods brand)
2 tbsp coconut oil, melted
1 C almond flour
Sprinkle of cinnamon
1/4 tsp salt
1/4 C mini chocolate chips, dairy free (I use enjoy life brand)
Version 2: Makes 16 balls, 8 servings
1 can chickpeas, rinsed and drained
1/4 C Milk of your choice
2 1/2 tbsp granola butter
1 tsp ground flaxseed
2 dates
Pinch salt
2 tbsp protein powder
1 tbsp maple syrup
1/4 C dairy free chocolate chips
**For chocolate coating 1 bar of chocolate + 1 tsp coconut oil
Directions:
1. Mix all the dry ingredients in one bowl. Mix all the wet ingredients in a separate bowl.
2. Pour the dry ingredients into the wet until combined and sticky
3. Fold in chocolate chips.
4. Roll into balls. Freeze for minute. Eat plain or dip in melted chocolate and freeze again to make a hard shell
