Honey Miso Bacon Brussels Sprouts

Equipment

  • 1 Sheet pan
  • 1 skillet

Ingredients

  • 6 Slices Bacon of your choice, regular or turkey will work
  • 1 Stalk Brussels sprouts (about 4lbs) You can buy the stalks at Wholefoods
  • 2 tbsp Olive oil (or bacon drippings)
  • 2 tsp Salt
  • 1/4 tsp Black pepper

Miso Honey Glaze

  • 1`1/2` tbsp White miso paste
  • 2 tbsp Honey
  • 1 tbsp Spy sauce or Tamari if gluten free, or coconut aminos
  • 2 tsp Olive oil
  • 1 tsp Rice vinegar or lemon juice
  • 1/2 tsp Garlic powder
  • 1 Pinch Salt
  • 1/4 tsp Black pepper

Instructions

  • Pre heat oven to 425F. Prepare 1 large or 2 small baking sheets. Quarter the brussels
  • In a skillet, cook the bacon until crisp. About 10-15 minutes. You can use the excess oil in the pan to pour over the brussels for extra flavor if you like or use olive oil like I did in the video
  • Spread the brussels out on the baking sheet(s). Pour the olive oil, salt and pepper over the top and mix well until coated.
  • Roast cut side down for 20-25 minutes until crispy
  • In a small bowl whisk the glaze together.
  • Chop the bacon into bits
  • When the brussels are ready pour the bacon and glaze over the top and mix well
  • Return the pan to the oven for 5 more minutes to caramelize the glaze
