Italian Sub Brushcetta

Dairy, Gluten & Nut Free

1/2lb Ham, fresh roasted can be found at whole foods for less sodium

1/4 salami, I used applegate because it’s dairy free

1 C grape tomatoes , quartered

3 C shredded lettuce, I used iceberg for authenticity

1 tsp dried italian seasoning

1/4 C red onion, diced

1/4 tsp black pepper

1/4 tsp salt

1/4 C olive oil

1/4 C red wine vinegar

1/3 C diced pepperocini peppers, pickled

*I used Crunchmaster crackers because they’re gluten and dairy free, don’t contain any seed oils and have healthy seeds like flax. Traditionally an italian baguette is used but that contains gluten

Directions :

  1. Combine all the ingredients in one large bowl and mix well. Let marinate for at least 10 minutes before serving.
  2. Serve with crackers

**If you want to make this ahead of time don’t add the lettuce until ready to serve
