Hidden Veggie Muffins

Dairy & Gluten Free

Ingredients: Makes 12

2 bananas

3 C fresh spinach

1/2 C non-dairy milk of your choice

2 1/4 C Trueats pancake & waffle mix

1/4 C avocado oil

2 tsp baking soda

1/2 tsp cinnamon

1/3-2/3 C Trueats Monk Fruit Sweetener (adjust to your liking for sweetness)

1/4 tsp salt

1 1/2 tsp vanilla extract

1 tsp white or apple cider vinegar

Directions:

  1. Preheat oven to 350F. Line a muffin tin with baking cups
  2. In a blender combine the spinach and all the wet ingredients until smooth
  3. Add the dry ingredients to the blender and blend until full combined
  4. Pour about 1/4 C of mixture into each baking cups
  5. *optional: top with chocolate chips
  6. Bake for 10-12 minutes and allow to cool 10 minutes before enjoying
