Hidden Veggie Muffins

Ingredients: Makes 12
2 bananas
3 C fresh spinach
1/2 C non-dairy milk of your choice
2 1/4 C Trueats pancake & waffle mix
1/4 C avocado oil
2 tsp baking soda
1/2 tsp cinnamon
1/3-2/3 C Trueats Monk Fruit Sweetener (adjust to your liking for sweetness)
1/4 tsp salt
1 1/2 tsp vanilla extract
1 tsp white or apple cider vinegar
Directions:
- Preheat oven to 350F. Line a muffin tin with baking cups
- In a blender combine the spinach and all the wet ingredients until smooth
- Add the dry ingredients to the blender and blend until full combined
- Pour about 1/4 C of mixture into each baking cups
- *optional: top with chocolate chips
- Bake for 10-12 minutes and allow to cool 10 minutes before enjoying
