No Bake Protein Bars, Gluten & Dairy Free

Ingredients: Makes about 5 bars, 5g of protein each 150 calories

1/2 C sunflower butter or nut butter

1/3 C honey

1 tsp vanilla extract

2 tbsp avocado oil or coconut oil

1/2 C vanilla protein powder- I used Truvani it’s dairy free

1 C oats, gluten free. I like One Degree Organic because it’s third party tested for glyphosphates

1 tbsp chia seeds. I used Manitoba harvest chia, hemp and flax seed mix because that’s what I had on hand today

1/3 C toasted coconut or shredded coconut or you can leave it out all together if allergic

2 tbsp dairy free chocolate chips melted with 1 tsp coconut oil or avocado oil for a topping

Directions:

  1. In a saucepan heat the sunflower butter, coconut oil, vanilla and honey until combined and smooth
  2. While that’s heating up add the oats, protein powder and chia seeds in a bowl.
  3. Pour the warm sunflower butter mixture on top of the oat mixture and mix well
  4. Line an 8×4 loaf pan with parchment paper. Press the mixture into the bottom of the pan as evenly as possible
  5. Warm your chocolate chips and oil in the microwave 30 seconds at a time until the chocolate is smooth.
  6. Drizzle the chocolate on top of the bars. Sprinkle flaky salt and refrigerate for 1 hour before cutting into bars
