No Bake Protein Bars, Gluten & Dairy Free

Ingredients: Makes about 5 bars, 5g of protein each 150 calories
1/2 C sunflower butter or nut butter
1/3 C honey
1 tsp vanilla extract
2 tbsp avocado oil or coconut oil
1/2 C vanilla protein powder- I used Truvani it’s dairy free
1 C oats, gluten free. I like One Degree Organic because it’s third party tested for glyphosphates
1 tbsp chia seeds. I used Manitoba harvest chia, hemp and flax seed mix because that’s what I had on hand today
1/3 C toasted coconut or shredded coconut or you can leave it out all together if allergic
2 tbsp dairy free chocolate chips melted with 1 tsp coconut oil or avocado oil for a topping
Directions:
- In a saucepan heat the sunflower butter, coconut oil, vanilla and honey until combined and smooth
- While that’s heating up add the oats, protein powder and chia seeds in a bowl.
- Pour the warm sunflower butter mixture on top of the oat mixture and mix well
- Line an 8×4 loaf pan with parchment paper. Press the mixture into the bottom of the pan as evenly as possible
- Warm your chocolate chips and oil in the microwave 30 seconds at a time until the chocolate is smooth.
- Drizzle the chocolate on top of the bars. Sprinkle flaky salt and refrigerate for 1 hour before cutting into bars
