Crispy Orange Chicken

Ingredients for chicken:
1 1/2lbs Chicken thighs or breasts, cubed
Juice of 1 orange
1 C Flour
1 tsp salt
1/4 tsp black pepper
Oil for frying
Ingredients for sauce:
1 tbsp vegetable oil of your choice
1 tbsp minced ginger
3 cloves garlic
Zest from 2 oranges
1/4 C rice wine vinegar
1/4 C soy sauce
2 green onions, diced
Slurry:
1 tsp cornstarch
3 tbsp water
**Optional side dish rice and steamed broccoli
Directions:
1. Marinate the chicken cubes in the fresh pressed orange juice.
2. In a saucepan whisk together the oil, ginger, garlic, vinegar, soy sauce and green onions until it reduces to half.
3. Add the slurry and simmer until thick. Remove from the pan and set aside
4. Dredge the chicken in the flour, salt and pepper. Using the same pan add cooking oil, enough to coat the entire pan. Add the chicken and cook about 4 minutes each side until crispy.
5. Once the chicken is cooked through set it on a paper towel to absorb the extra oil
6. Toss the chicken with the sauce. Serve with rice, fresh sliced green onion and broccoli or vegetable of choice
