One layer Strawberry Shortcake

Dairy free, Egg free, Can be made gluten free
Ingredients:
1 1/2 C Flour (gf all purpose or regular)
1 C sugar (coconut sugar won’t work for this one)
1 1/2 tsps vanilla extract
5 tbsp avocado oil
1 tsp baking soda
1/2 tsp salt
1 tsp white vinegar
1 C water
Optional topping: I used coconut whipped cream and strawberries
Directions:
1. Preheat oven to 350F. Line a 9×9 round pan with parchment paper
2. In a large mixing bowl add the flour, sugar, salt and baking soda. whisk to combine
3. In the flour mixture make 3 wells. Put the oil in one, vinegar in another and vanilla in the last. Pour the water over the top and mix until combined
4. Pour into the pan and bake 25-30minutes
5. Let the cake cool for about an hour before putting the cream on so it doesn’t melt!
