20 Minute Crispy Orange Beef

Ingredients: Makes 4 servings
3 tbsp vegetable oil of your choice
1.5lbs beef, I used a NY strip steak, sliced thin
2 tbsp arrowroot powder or cornstarch
Salt + Pepper to season the steak
1 large onion, sliced
1 large red bell pepper, sliced
Sauce:
Zest of 1/2 of an orange
Juice of 2 oranges
3 tbsp honey
1-2 cloves garlic
1 tsp rice wine vinegar
1 tsp fresh ginger
5 tbsp tamari, soy sauce or coconut aminos
Topping: Fresh green onion
Side: Rice, cauliflower rice or quinoa
Directions:
1. Sprinkle salt and pepper on the beef. Coat the beef in the starch.
2. Heat 2 tbsp of oil in the pan on medium-high. Add the steak and cook about 6 minutes until crispy. Remove the steak from the pan and set aside
3. Add 1 tbsp of oil to the same pan. Add the onions and peppers and cook until slightly soft about 6 minutes.
4. Add the sauce and bring to a simmer.
5. Add the beef and stir so it’s completely coat in the sauce. Allow to simmer one minute and then remove from the heat
6. Serve with fresh green onion and rice
