One Pot Mexican Beef & Rice

Ingredients: Makes 8 servings
1.5lbs ground beef or turkey
2 tbsp coconut oil or olive oil
1 yellow onion
1 bell pepper
2 Cloves garlic
1/2 pkg of taco seasoning, low sodium
1/4 C water
1 C mild salsa
1 15oz black beans, drained
1 15oz corn, drained
1 1/4 C long grain rice
2 1/2 C Beef broth or 1 C bone broth and 1 1/2 C beef broth)
Optional toppings: Cilantro, cheese, vegan cheese, avocado, lime juice
Directions:
1. In a skillet heat the oil and add the onion and bell pepper. Cook for a few minutes until the onions are translucent
2. Add the garlic
3. Add the beef and cook until it’s completely cooked through
4. Add the taco seasoning and water and let simmer for a few minutes until all the sauce has been soaked up by the meat
5. Add the salsa, beans, corn, rice and broth. Bring to a boil and then reduce to low. Cover the pan and let simmer for 20 minutes, stirring occasionally so you don’t burn the rice.
6. Sprinkle on your toppings and serve!
