Pesto Chicken Meal Prep

Ingredients: For 1 portion
3 tbsp orzo, rice or quinoa *see notes about cooking time
5 oz chicken breast, cubed
1 tbsp pesto
1/4 C low sodium chicken broth
5 grape tomatoes
Directions:
1. Preheat oven to 350F
2. Add all the ingredients except the tomatoes to the meal prep bowls. Mix well. Make sure the chicken is submerged in the broth.
3. Add the tomatoes and bake.
*For orzo bake for 1 hour, even if there is a small amount of liquid remaining it will absorb when the dish rests
*For rice or quinoa check the liquid level at 40 minutes. Keep in mind some liquid will absorb when the dish rests
