20 Minute Crispy Lemon Chicken
Ingredients: Makes 4 servings
1lb chicken breast, cubed
1 C cornstarch or arrowroot powder
Pinch salt and pepper
2 tbsp olive oil
Ingredients for sauce:
1/4 C low sodium chicken broth, I use Kitchen Basics Brand
1/4 C fresh lemon juice
Zest from 1 lemon, about 1 tbsp
2 tbsp honey
2 tbsp soy sauce, coconut aminos or tamari
1 tbsp grated fresh ginger
1 tbsp minced garlic
1 tbsp cornstarch
*Optional: pinch of red pepper flakes
Green onions for topping
Sides: I served this with rice but you can use quinoa, riced cauliflower or wrap the chicken in a lettuce wrap
Directions:
1. Add the salt and pepper to the corn starch and mix. Dredge the chicken through the mixture until coated.
2. Heat the olive oil in a pan on medium-high heat and add the chicken. Cook until the chicken is golden brown and cooked through about 7 minutes
3. While the chicken is cooking prepare the sauce by whisking the ingredients together
4. Pour the sauce over the chicken and let simmer 1 minute for the sauce to thicken. Sprinkle green onion on top and serve!
