Protein “PB” Crunch Balls

•I made these nut free by using granola butter instead of peanut butter but you could use sun butter or any nut butter you like!

•Dairy free, Gluten free•

Ingredients:

1/2 C Granola butter (or nut butter or sun butter)

1/4 C Honey

1 tsp Vanilla

1 scoop protein powder (I use sun warrior rice protein)

1/2 C Rice puffs ( I used The Real Cereal Company Brand)

1/2 tsp Cinnamon

1 tbsp mini chocolate chips ( I used Enjoy Life brand because they’re dairy free) + more to melt for optional chocolate coating. *I mixed 1 C of the chips with 1 tsp coconut oil to make a dipping chocolate. I melted them according to the package directions

Directions:

1. In a mixing bowl combine the granola butter, honey, cinnamon, vanilla, protein powder and chocolate chips until smooth

2. Add the rice puffs and mix until fully incorporated evenly.

3. Roll the mixture into balls (about 1 tbsp per ball). Lay them on a parchment paper lined sheet pan or dish and pop them in the freezer for 30 minutes

4. After removing them from the freezer melt some chocolate and dip them in to make a shell outer coating. Return to the freezer for 30 minutes. Let them defrost a few minutes before eating. Store in refrigerator
