Protein Strawberry Quinoa Bars
Ingredients: Makes 9
2 ripe bananas, smashed
1 1/2 C strawberries, smashed (and more for topping)
1 1/2 C Quinoa flakes or oat flour (quinoa flakes have more protein)
1 C cooked quinoa
1/3 C honey
1 tsp cinnamon
1 tsp baking powder
1/4 C hemp seeds
2 flax eggs or 2 chia eggs or 2 real eggs (flax egg = 2 tbsp ground flax and 6 tbsp water same for chia)
2 tbsp vanilla extract
Directions:
1. Preheat oven to 350F. Prepare a 9×9 baking dish by lining with parchment paper or using a non stick pan
2. In a small bowl mix all the dry ingredients together.
3. Smash the bananas and strawberries into the baking dish. Add the dry ingredients and wet ingredients mix well
4. Bake for 30 minutes or until the center is cooked and a toothpick comes out clean
