Equipment

  • Mini Muffin Pan

Ingredients

Dry Ingredients

  • 1/2 C Gluten free oat flour
  • 1 scoop Vanilla protein powder I used Truvani which is dairy free
  • 1 tsp Baking powder
  • 1 tsp Pumpkin Pie Spice
  • 1 pinch Salt

Wet Ingredients

  • 1/4 C Milk of your choice I used oat milk
  • 1 Egg or 3 tbsp liquid egg whites
  • 1 tsp vanilla extract
  • 1/2 C Mini chocolate chips Optional
  • 1/3 C Pumpkin puree

Instructions

  • Preheat oven to 350F. Line a mini muffin tin with liners or use a non stick pan
  • In a mixing bow combine the dry ingredients
  • In a separate mixing bowl combine the wet ingredients
  • Pour the wet ingredients into the dry. Mix well
  • Fold in the chocolate chips if using
  • Pour the batter into each well about 3/4 full
  • Bake for 12-14 minutes until a toothpick comes out clean
  • Optional: I topped some of mine with coconut whipped cream and sprinkle of cinnamon after they cooled
