Pumpkin Protein Bites


Pumpkin Spice Protein Bites
Dairy and Gluten Free muffin bites
Equipment
- Mini Muffin Pan
Ingredients
Dry Ingredients
- 1/2 C Gluten free oat flour
- 1 scoop Vanilla protein powder I used Truvani which is dairy free
- 1 tsp Baking powder
- 1 tsp Pumpkin Pie Spice
- 1 pinch Salt
Wet Ingredients
- 1/4 C Milk of your choice I used oat milk
- 1 Egg or 3 tbsp liquid egg whites
- 1 tsp vanilla extract
- 1/2 C Mini chocolate chips Optional
- 1/3 C Pumpkin puree
Instructions
- Preheat oven to 350F. Line a mini muffin tin with liners or use a non stick pan
- In a mixing bow combine the dry ingredients
- In a separate mixing bowl combine the wet ingredients
- Pour the wet ingredients into the dry. Mix well
- Fold in the chocolate chips if using
- Pour the batter into each well about 3/4 full
- Bake for 12-14 minutes until a toothpick comes out clean
- Optional: I topped some of mine with coconut whipped cream and sprinkle of cinnamon after they cooled
