Gluten Free Caramelized Banana Bread


Caramelized Banana Bread

Equipment
- 1 9×13 Pan
Ingredients
For the Caramelized Banana Layer
- 3 Ripe bananas, cut in half
- 1/2 C Coconut sugar or brown sugar
- 4 tbsp Pure Maple Syrup
- 4 tbsp Butter of your choice I used vegan butter to make it dairy free
- 1 pinch Salt
- 1 pinch Cinnamon
Dry Ingredients
- 3.5 C Gluten Free 1:1 Flour If not gluten free you can also use all-purpose flour but you will need to add 4 additional tbsp of milk
- 1 C Oat flour Gluten free
- 3 tsp Baking powder
- 2 tsp Salt
- 3 tsp Ground cinnamon
Wet Ingredients
- 6 Ripe bananas, mashed
- 2/3 C Melted coconut oil or avocado oil
- 1/2 C Milk of your choice I used oat milk to be dairy free
- 4 Eggs or Flax eggs
- 3 tsp vanilla extract
- 1 C Chocolate chips Optional: I used Enjoy Life Brand they're dairy free
Instructions
- Preheat oven to 350F. Lightly grease the sides of a 9×13 baking pan
- To make the caramelized banana layer cut the bananas lengthwise. Layer them in the pan (you can also cut dials but they looked a little more messy when it came time to cut the banana bread so it's up to you)
- In a small saucepan heat the sugar, maple syrup, butter, salt and cinnamon until completely combined, smooth and just starts to bubble. Pour the mixture over the bananas
- In a large mixing bowl add all the dry ingredients and whisk until evenly combined
- In a separate bowl mix all the wet ingredients
- Pour the wet ingredients into the dry and mix well. This will be a thick batter
- If you're adding chocolate chips pour them in now and fold the batter
- Pour the batter into the pan and gently spread it out to fill the pan all the way to the corners as evenly as possible
- Bake for 40-45 minutes until a toothpick comes out of the center of the banana bread clean
