Teriyaki Tacos

Ingredients for teriyaki sauce:
1/2 C Tamari or soy sauce is not gluten free
1 tsp fresh grated ginger
1 tsp cornstarch
Ingredients for tacos: Makes 4 servings
8 Tortillas of your choice
1lb shredded chicken * See notes
1 english cucumber sliced thin
6-7 green onions sliced thin
3 tbsp honey
Sauces:
Sweet chili sauce – I used Gramma’s brand
Sriracha mayo- I mixed 2 tbsp vegan mayo with 1 tsp sriracha
*Note: If you want to make the shredded chicken from scratch boil 3 chicken breast for 15-20 minutes until completely cooked. Drain the water and then use a hand mixer to shred the chicken. If you’re not using fresh chicken you can use rotisserie chicken or buy it shredded already
Directions:
1. In a small bowl whisk the sauce ingredients. Pour them into a skillet, stirring often simmer until thickened about 3-5 minutes.
2. Pour the sauce over the shredded chicken and mix well until all the chicken is coated.
3. Spread the chicken out on a sheet pan. Drizzle honey over the chicken especially the large pieces. This will help them caramelize
4. Turn the oven on broil and pop the chicken into the oven. Watch it very closely because broil works fast! The chicken will begin to brown and caramelize in about 2-3 minutes. Remove it from the oven
5. Layer your tortillas with chicken, cucumbers, sauces and green onion and serve!
