Mango Chicken Avocado Bowl with Cilantro lime sauce

About 28g of protein and 400 calories per bowl
Ingredients: For 1 bowl/serving
1 breast of chicken, cooked and diced or 1 C rotisserie chicken diced
1/4-1/2 Mango, diced
1/4 Avocado, diced
1/4-1/2 English cucumber sliced
1/2 C Rice
Fresh cilantro for topping
Ingredients for Cilantro Lime Sauce: Makes 6-8 servings
1/2 C Cilantro packed
1 lime, zest and juice
1 1/4 C vegan mayo or dairy free yogurt
1/4 tsp salt
2 tbsp white wine vinegar
*Blend in a food processor and serve. Store in refrigerator for up to 4 days
Directions for bowl:
1. Combine all the ingredients in a bowl and use the sauce to dip as needed. By dipping instead of pouring the dressing over the bowl you’re less likely to overeat and extra calories.
