Thai Chicken Meatballs

Ready in 20 minutes! Gluten free option and dairy free!

Ingredients:

1lb Ground chicken (a mix of dark and white meat, all white meat is too dry)

1 Slice of bread, bread of your choice

1 Inch of fresh ginger peeled and minced

1 Small onion, White or yellow

1 Clove garlic

1/2 Lime juice

8-12 Fresh Basil leaves, minced

1 tbsp Low sodium Soy Sauce or tamari for gluten free

Salt & pepper

optional: 1 jalapeño seeded and minced

Side dish: Rice

Toppings: Sweet chili sauce, green onion, sesame seeds

Directions:

1. Preheat oven to 400F. Line a sheet pan with tin foil

2. In a large bowl mix all the ingredients until blended. Divide the mixture into 12 balls and line them up on the baking sheet with 1-2 inches in between. Bake for 20 minutes.

3. For extra flavor and color brown the meatballs in a skillet with olive oil or sesame oil for 5 minutes. Serve warm!
