Apple Cinnamon Baked Oats

Equipment

  • 1 8x8 baking dish

Ingredients

Apple Grid Topping (optional)

  • 5 Small apples I used green and red

Dry Ingredients

  • 1 1/2 C Diced apples, I used honey crisp
  • 1 C Oats
  • 1 C Oat flour
  • 2 scoops Protein powder (a little less than 1/2 cup)
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 tsp Baking powder
  • 1/4 tsp Salt

Wet Ingredients

  • 3/4 C Applesauce
  • 1/4 C Pure maple syrup
  • 2 C Milk of choice, I used rice milk

Instructions

  • Preheat oven to 350F.
  • Dice the apples until you have 1 1/2 cups (I left the peel on for extra fiber but you can also peel your apple) in your baking dish combine the chopped apples, oats, oat flours, protein powder, cinnamon, nutmeg, baking powder and salt.
  • Add the applesauce, maple syrup and milk and mix well.
  • To make the grid topping slice the apples into thin slices and overlap 4 slices alternating directions vertically and horizontally. (I also alternated colors that's up to you)
  • Bake for 45-55 minutes until the center is cooked through and a toothpick comes out clean
