Crispy Rice Caesar Salad, Dairy & Gluten Free

Equipment

  • 1 Large mixing bowl

Ingredients

For the rice

  • 2 Cups Cooked rice
  • 1 tbsp Olive oil or avocado oil
  • 2-3 tbsp Tamari or coconut aminos
  • 1 tsp Garlic powder Optional: omit if you have reflux
  • 1 tsp Onion powder Optional: omit if you have reflux
  • 1/4 tsp Black pepper

For the salad

  • 2 C Crispy chicken, I used air fried chicken strips
  • 2 Hearts of romaine, chopped
  • 1 Avocado diced
  • 1/2 C Dairy free Caesar dressing, I used Side Dish brand

Instructions

  • Pre heat the oven 425F. Line a baking sheet with parchment paper
  • Spread the rice out on the pan. Mix with oil, tamari and seasonings until full coated.
  • Spread the rice evenly so it gets crispy. If it's piled on top of each other it won't crisp. Bake for 25 minutes flipping half way.
  • In a large mixing bowl combine the lettuce, chicken, avocado, rice and dressing. Toss and serve!
