Dairy & Gluten Free Apple Crumble Protein Muffins

Ingredients

For the muffins: Dry Ingredients

  • 2 C Oat flour Gluten free
  • 2 tbsp Collagen powder I used Vital Proteins
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 1/2 tsp Apple pie spice or just ground cinnamon
  • 1/4 tsp Salt

For the Muffins: Wet Ingredients

  • 2 Eggs
  • 1/3 C Avocado oil or melted coconut oil
  • 1/3 C Pure maple syrup
  • 1/4 C Unsweetened applesauce
  • 1/4 C Milk of your choice
  • 1 tsp Vanilla extract
  • 1 C Shredded, grated or finely diced apples I used honey crisp

For the Crumble topping

  • 1 1/2 C Oat Flour Gluten free
  • 1/2 C Coconut sugar or brown sugar
  • 1 tsp Ground cinnamon
  • 1 pinch Salt
  • 7 tbsp Avocado oil or melted coconut oil
  • 2 tbsp Pure maple syrup

Instructions

  • Pre heat oven to 375F. Line a muffin tin with parchment baking cups. Prepare 3 mixing bowls
  • In the largest mixing bowl add the dry ingredients and whisk together
  • In the next large mixing bowl combine the wet ingredients and whisk together
  • Pour the wet ingredients into the dry and blend
  • In the last mixing bowl combine the crumble topping ingredients using a fork so it makes large crumble pieces
  • Divide the muffin batter into the 12 cups. About 1/4 C of batter for each one
  • Generously top each muffin with the crumble mixture. Be sure to lightly tap down on the crumble so it sticks to the muffin when baking and doesn't fall off
  • Bake for 20-24 minutes, until a toothpick comes out clean out of the center of the muffin. Allow to cool 10 minute before enjoying

Each muffin contains 8-9g of protein depending on the brand of collagen you use
