For the Crumble topping
1 1/2 COat FlourGluten free
1/2CCoconut sugar or brown sugar
1tspGround cinnamon
1pinchSalt
7tbspAvocado oil or melted coconut oil
2tbspPure maple syrup
Instructions
Pre heat oven to 375F. Line a muffin tin with parchment baking cups. Prepare 3 mixing bowls
In the largest mixing bowl add the dry ingredients and whisk together
In the next large mixing bowl combine the wet ingredients and whisk together
Pour the wet ingredients into the dry and blend
In the last mixing bowl combine the crumble topping ingredients using a fork so it makes large crumble pieces
Divide the muffin batter into the 12 cups. About 1/4 C of batter for each one
Generously top each muffin with the crumble mixture. Be sure to lightly tap down on the crumble so it sticks to the muffin when baking and doesn't fall off
Bake for 20-24 minutes, until a toothpick comes out clean out of the center of the muffin. Allow to cool 10 minute before enjoying
