Gut Healthy Chocolate Peanut Butter Muffins

Equipment

  • 1 Muffin tray
  • 1 Large mixing bowl

Ingredients

Wet Ingredients

  • 1/2 C Applesauce, unsweetened
  • 1/2 C Nut butter, sunflower butter or granola butter
  • 2 Eggs or flax eggs
  • 1/3 C Pure maple syrup
  • 1/4 C Avocado oil or coconut oil
  • 1 tsp Pure vanilla extract

Dry Ingredients

  • 1 1/2 C Oat flour
  • 1/2 C Almond flour (or more oat flour)
  • 1/3 C Cocoa powder
  • 1 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 1-2 Scoops Collagen peptides

Add-ins

  • 1/2 C Chocolate chips optional

Instructions

  • Pre heat oven to 350F. Line a muffin pan with muffin liners
  • In a large mixing bowl combine all the dry ingredients.
  • Add the wet ingredients to the bowl and mix until combined
  • Fold in the chocolate chips if using
  • Bake for 18-22 minutes or until a toothpick comes out clean
