Roasted Grape PBJ Overnight Oats

Equipment

  • 2 Jars with lids
  • 1 Baking sheet

Ingredients

Roasted grapes

  • 1 C Grapes
  • 1 Pinch Cinnamon
  • 1 tbsp Pure maple syrup

Overnight Oats

  • 1 C Oats, gluten free
  • 2 tbsp Chia seeds
  • 1 C Coconut kefir (or milk of your choice) I used kefir for the gut health benefits and it's thicker so it makes the oats more creamy but you can use what you prefer
  • 2 scoops Collagen peptides or vegan protein powder For blood sugar stability
  • 1 tsp Cinnamon
  • 1-2 tsp Pure maple syrup
  • 1 tbsp Sunflower butter, nut butter or granola butter *I wiped mine on the side of the jar because I prefer eating it that way but you can also mix it directly into the oats

Instructions

  • Preheat oven to 350F. Line a baking sheet with parchment paper. Spread the grapes out onto the pan. (you can remove the steams ahead of time or leave them on whatever is easier for you).
  • Sprinkle the maple syrup and cinnamon over the grapes. Bake for about 40 minutes filliping half way.
  • In the jars (optional) spread the nut butter onto the side of the jar, add the oats, chia seeds, roasted grapes, peptides, cinnamon, maple syrup and kefir milk in that order. Stir and cover. Refrigerate overnight

Notes

The roasted grapes taste just like jam but if you want extra you can always add chia jam
