15 Minute Korean Beef Bowl

1lb ground beef
1 tbsp fresh grated ginger
6 tbsp soy sauce or tamari (low sodium)
1 C grated carrots or matchstick
3 Cloves garlic
1 1/2 tbsp brown sugar or coconut sugar
1 tsp vegetable oil of your choice
*Optional base: I used 1/2C cooked rice per person as the base but you could use any carb you’re comfortable with. It goes well with sweet potato!
Directions:
1. In a skillet cook your beef until completely cooked through and lightly browned about 6-10 minutes
2. Set the beef aside in a separate plate.
3. In the same pan add the garlic, ginger, soy sauce and sugar and mix until it thickens.
4. Add the carrots and cook for 2 minutes until they’re wilted.
5. Return the beef to the pan and mix well
6. Serve with sliced green onion and rice
