2 Minute Blueberry Oat Mug Cake

Ingredients: Makes 1 serving

1/4 C rolled oats, gluten free

3 tbsp flour of your choice (I use oat flour)

1 tbsp coconut sugar or granulated sugar

1/2 tsp baking powder

1/4 tsp cinnamon

Pinch of salt

1/4 C Milk of your choice

2 tbsp apple sauce or melted coconut oil

1/4 C fresh blueberries

Directions:

  1. In a small bowl mix everything except the blueberries until combine

2.Fold in the blueberries

3. Pour the mixture into a ramekin and add a few more blueberries to the top

4. Microwave for about 1.40 seconds to 1.50 seconds. Until the center is cooked

*The oats alone have 10g or protein. Eating it with a protein yogurt or smoothie can get you to 30g total for breakfast which is the ideal amount for most people. You can also eat this as a snack without any yogurt
