Ingredients: Makes 4 servings

1lb ground beef, I use Laura’s Lean Beef

2 C broccoli florets, make sure they’re cut small so they cook through quickly

1 red bell pepper, diced

1 C shredded carrots (also called matchstick carrots)

1 C snap peas

3 green onions, and extra for topping

3 cloves garlic, minced

1 tbsp fresh ginger, grated

3 tbsp oil of your choice

Sauce ingredients:

1/4 C low sodium tamari

3 tbsp honey

2 tbsp rice wine vinegar

1 tsp toasted sesame oil (or vegetable oil if there’s a sesame allergy)

1 tbsp arrowroot powder or corn starch

2 tbsp water

Directions:

  1. In a small bowl whisk all the sauce ingredients together and set aside.
  2. In a pan cook the beef until browned about 6-7 minutes. Remove the meat from the pan and set aside
  3. Add 1 tbsp of oil to the pan in the center. Add the garlic, ginger and green onion directly to the oil and cook for 1 minute.
  4. Add all the vegetables and another 1-2 tbsp of oil and cook them about 5 minutes until tender
  5. Pour the meat back into the pan and the sauce. Mix well until everything is coated in the sauce and the sauce has thickened. About 2-3 minutes. Serve warm as is or over rice or quinoa
