Anti-Inflammatory Stone Fruit Salad

3-4 medium ripe peaches
3-4 medium plums (I prefer the blood plums but can’t find them anywhere! Any plum is fine)
1-2lbs cherries, fresh and pitted I use this tool to remove the pit it takes seconds
1 pint blackberries
1 pint blueberries
5 kiwis, I used the ruby red kiwis from Zespri because they’re in season
*Note: Mix the sliced peaches, plums, cherries, blackberries and blueberries before adding the kiwi because they’re fragile and fall apart easily. Add them on top and then pour the dressing over everything and THEN mix so the olive oil prevents them from getting ripped apart by the mixing
Dressing:
4 leaves fresh mint, minced
4 tbsp light olive oil-I know you’re thinking olive oil on fruit?! But YES a light olive oil has very little flavor and helps with digestion
Juice of 1 lime
1 tbsp honey
Whisk together and pour over the top
