Apple Pie Muffins (high fiber, no refined sugar)

•No refined sugar, high fiber, dairy free, high iron•

Ingredients: Makes 12

2 C Oats

8 dates

1/4 C avocado oil

1/4 C applesauce

1/4 C maple syrup

2 chopped apples

2 eggs

1 1/2 tsp baking soda

pinch of salt

1/2 tbsp ground cinnamon

Directions:

1. Preheat oven to 350F

2. Add all the ingredients to a blender except the apples. Blend until smooth

3. Fold the apples into the batter

4. Divide into 12 baking cups

5. Bake for 350F for 15-18 minutes
