Balanced Bood Sugar Berry Bites

Equipment

  • 1 Sheet pan
  • 2 Small mixing bowl

Ingredients

Berries

  • 1 pint Raspberries
  • 1 pint Blueberries
  • 1 pint Blackberries

Dairy free yogurt mixture

  • 2 C Coconut yogurt, greek style – I used Cocojune brand
  • 2 tbsp Nut butter, sunflower butter or granola butter *If you're using granola butter, microwave it for 30 seconds alone in a bowl to soften it and it will be easier to mix into the yogurt
  • 1 Scoop Collagen peptides, optional but does help with blood sugar stability and also supports the gut lining
  • 1 tbsp Honey or Pure maple syrup *optional but adds a little sweetness I used maple syrup

Chocolate topping

  • 1 C Dark chocolate chips
  • 1 tsp Coconut oil

Instructions

  • Find a sheet pan that will fit in your freezer. Mine is 9×13''. Line the sheet pan with parchment paper
  • Wash and pat dry the berries. Spread out the berries
  • In a small mixing bowl combine the yogurt, collagen, nut butter and honey until smooth.
  • Spread the yogurt mixture over the berries evenly. Put the tray into the freezer while you melt the chocolate
  • In a small bowl, mix the chocolate chips and coconut oil. Microwave in 30 second intervals until completely smooth. Remove the tray from the freezer and pour the chocolate over the top evenly. Spread it out and return to the freezer for about 1 hour
