Berry Bars

Ingredients for berry filling:
2 C Fresh berries (If you want to use frozen heat them in a skillet first for 5-10 minutes and drain 2 tbsp of liquid off before using) *If you want to use strawberries dice them first
1 tbsp lemon juice
2 tbsp date sugar, coconut sugar, granulated sugar or brown sugar
2 tbsp all natural maple syrup
1 1/2 tbsp cornstarch, arrowroot powder or tapioca starch
1 scoop protein powder *If you don’t want to use protein powder you can leave it out of the recipe without making any adjustments
Ingredients for base & topping:
1 3/4 C rolled oats, gluten free
1 1/4 C flour (almond, all-purpose or gluten free all purpose will work)
1/2 tsp baking soda
1/8 tsp salt
1/2 C all natural maple syrup
1/3 C coconut oil or avocado oil
1/2 tsp vanilla extract
Directions:
1. Preheat oven to 375F. Line a 9×9 pan with parchment paper
2. In a large mixing bowl add all the topping ingredients and mix well until a crumbly, sticky mixture forms. Separate 3/4 C of the mixture and set it aside, this will be the topping portion
3. In a smaller mixing bowl mix all the berry filling ingredients until fully combined
4. Press the oat mixture into the bottom of the pan making it as even as possible
5. Pour the berries over the oat mixture and organize them into an even layer.
6. Sprinkle the topping over the berries. Some of the berries will be exposed and that’s ok
7. Bake for 20-25 minutes until the topping is golden brown and the berries are bubbling
Allow to cool for 45 min to an hour before serving.
Store in the refrigerator for up to 5 days
