One Pan Lemon Chicken & Orzo

•Dairy free, Gluten free, Egg free, Nut free, Sesame free, Coconut free•

Ingredients: Makes 4 servings
1lb chicken breast, diced
1 C orzo, uncooked (Jovial Brand)
1/2 lemon juice
1 lemon sliced
1 clove garlic
3 C chicken broth (I use Kitchen Basics brand)
1 bunch spinach, fresh (cut small if you’re serving to toddlers or omit)
2 tbsp olive oil
1 tbsp vegan butter (or 1 tbsp olive oil)
salt + pepper to taste (I use 1 tsp salt and 1/2 tsp pepper on the chicken and then salt as needed after everything is finished cooking)
1 tbsp Italian seasoning
*Optional topping vegan parmesan

Directions :

1. In a skillet heat 1-2 tbsp of olive oil and add your chicken. Spread the italian seasoning, salt and pepper on top and mix well. Cook until the chicken is fully cooked and lightly browned. Set the chicken aside

2. In the same pan add the butter, garlic and orzo. Allow the orzo to toast for 2 minutes while continuously stirring.

3. Add the broth, lemon juice and lemon slices. Allow the orzo to simmer for 10 minutes (or the amount of time recommended on the package)

4. Add the chicken and spinach. Mix well and put the top on the skillet. Cook until the spinach is completely wilted, stirring occasionally. If your orzo starts to stick you can add a few tablespoons of broth to the skillet.

5. Serve! I like to serve with salt so everyone can adjust the taste to their liking. Salt takes the place of parmesan cheese in this dairy free recipe. They also make vegan parmesan if you prefer

  1. I made this for dinner tonight. It was delicious! My husband really like the lemon flavor.
    I did use a rotisserie chicken, so step one I just warmed it up with the oil and spices. I also used GF Jovial Orzi pasta. Turned out great with these substitutions.
    I do have a little constructive feedback. It would be good if you would add to the instructions, what temperature you’re supposed to put the rice on to cook, etc. There’s no temperatures listed. I figured it out:).
