Butternut Squash Turkey Chili

This one-pot meal is easy to make, healthy, packed with protein, 5 veggies, fiber, vitamins and minerals. Every bite is full of satiating flavor and it’s even a low budget meal! It’s also gluten free, dairy free, top 9 allergen free!

Ingredients:

1- 1 1/2lbs Ground turkey (If vegan add 3 more cans of beans-any kind)

1 15oz Can diced tomatoes, low sodium

1 16oz Frozen package of butternut squash or one whole fresh squash (frozen is cheaper and easier to work with, also $1 at target)

1-2 Green bell peppers, diced (if you don’t like peppers you can substitute zucchini)

1 Yellow onion, diced

1 Clove garlic

2 tbsp Olive oil or avocado

2 15oz Cans of red kidney beans, drained, low sodium

1 tsp Oregano

1 C Chicken Broth or broth of your choice

2 tsp Chili powder

2 tsp Pumpkin pie spice

1 tsp Salt

1/8 tsp Black pepper

2 tsp Cumin

Optional toppings: Avocado, cheese, vegan cheese, red onion, cilantro, sour cream

Directions:

1. Heat oil in a large stock pot

2. Add the ground turkey and cook about 7 minutes until fully cooked and crumbled

3. Add the spices, onion, bell pepper and garlic. Cook until the onion softens

4. Add in the beans, tomatoes, broth and squash.

5. Cover and cook on low for 30 minutes

6. Serve with garnish
