Copycat Clean Chipotle Bowl

Ingredients (Serves 4)

🍗 Cumin Chicken

2 lbs boneless, skinless chicken thighs (or breasts for leaner)

2 tbsp olive oil juice of

2 limes

3 cloves garlic, minced

2 tsp cumin

1 tsp chili powder

1/2 tsp paprika salt + pepper

optional for spicy: 1 chipotle pepper chopped (these come canned)

optional: 1/4 cup chopped cilantro

🍠 Roasted Sweet Potato Base

3 large sweet potatoes, cubed

2 tbsp olive oil

1 tsp cumin

1/2 tsp paprika salt

🌶️ Fajita Veggies

1 onion, sliced

2 bell peppers, sliced

1 tbsp olive oil

salt + pinch cumin

🥑 Toppings

1 cup pico de gallo

2 avocados (for guac, mashed with lime + salt)

1/2–3/4 cup Elmhurst dairy-free sour cream

fresh cilantro

Instructions

1. Roast the sweet potatoes

Toss with oil, cumin, paprika, salt Roast at 425°F for 25–30 min until golden + slightly crispy

2. Marinate & cook chicken

Mix oil, lime, garlic, spices Coat chicken, marinate 20–30 min Pan-sear or grill ~5–7 min per side until browned Let rest, then slice

3. Sauté fajita veggies

Cook onion + peppers in olive oil over medium-high Slight char = best flavor

4. Build bowls

Sweet potato base Chicken on top Add peppers + onions Pico + guac Drizzle dairy-free sour cream Finish with cilantro + extra lime
