Cilantro Lime Chicken Thigh Bowl

Ingredients (serves 2–3)

Chicken

1 lb boneless, skinless chicken thighs 2 tbsp olive oil juice of 2 limes 2 cloves garlic, minced 1/2 tsp cumin 1/2 tsp paprika salt + pepper 1/4 cup chopped cilantro

Bowl

1–1.5 cups cooked white rice 1 cucumber, sliced 1 avocado, sliced 1/4 cup pickled red onions extra cilantro for topping

Quick Pickled Red Onions

1/2 red onion, thinly sliced 1/2 cup vinegar (apple cider or white) 1/2 cup water 1 tsp salt 1–2 tsp maple syrup

Let sit at least 20–30 minutes (or overnight for best flavor)

Instructions

1. Marinate the chicken

Mix olive oil, lime juice, garlic, spices, salt, and cilantro.

Coat chicken and let sit at least 20 minutes (longer = more flavor).

2. Cook

Pan-sear over medium-high heat for ~5–6 minutes per side until golden and cooked through

(you want slight browning for flavor)

3. Build your bowl

Add rice Slice chicken and place on top Add cucumber, avocado, and pickled onions Finish with fresh cilantro + squeeze of lime
