Rice Cake Protein Snacks

I get requests for sweet and crunchy snacks all the time so I found a way to combine both of those requests and make them a little more nutritious
S’mores Protein Cake:
1 rice cake (Lundberg makes a clean rice cake)
1/3 C coconut whipped cream
1 packet vital proteins collagen *this is unflavored unlike protein powder which can be hard to cover the flavor
1/2 tsp vanilla extract
1/4 C dark chocolate chips
1 tsp melted coconut oil or avocado oil
Directions:
- In a small bowl mix the coconut whipped cream, collagen and vanilla.
- Put the mixture on top of the rice cake
- In an a separate bowl mix the chocolate and oil until all the chips are coasted. Microwave in 30 seconds waves stirring inbetween until completely melted.
- Cover the top with chocolate and freeze for 20 minutes
PBJ Protein Cake (can be made nut free as well)
1 rice cake
1-2 tbsp nut butter, sunbutter or granola butter (if you’re using granola butter you can add collagen protein to it to increase the protein)
2 tbsp smashed raspberries mixed with 1 tsp chia seeds
1/2 banana (unripe bananas has more resistant starch which is good for your gut. Ripe bananas are easier to digest)
1/4 C dark chocolate chips
1 tsp melted coconut oil or avocado oil
Directions:
- Top the rice cake with nut butter
- Add the sliced banana
- Add the raspberry smash
- Melted the chocolate and top the rice cake
- Optional, sprinkle sea salt on top and freeze for 20 minutes
