Creamy Pizza Orzo Bake • Dairy free

Ingredients:

1 lb orzo

1 diced onion

3 cloves minced garlic

1 tbsp italian seasoning

2 tsp salt

2 C fresh spinach

7 chopped fresh basil leaves

1 lb ground turkey or beef or beans if vegetarian

1 C tomato sauce

3 1/2 C Chicken broth, or broth of your choice

1 C diced mushrooms or artichokes or sun dried tomatoes

1 C diced cherry tomatoes or red bell pepper

2 tbsp olive oil

Directions:

1. Preheat oven to 400F

2. In a 13×9 pan layer all your ingredients. Mix and cover the pan with aluminum foil.

3. The total baking time will be 45-60 minutes stirring the mixture every 15 minutes. Remove the foil in the last 5 minutes if the pasta is cooked and liquid remains. Or add broth if needed during cooking. Every oven is different. Start taste testing the pasta to see if it’s done at the 45 minute mark. * This version is dairy free but if you’d like to add vegan cheese or regular cheese at the end you can do that as well and bake until the cheese melts
