One Pan Taco Skillet with extra veggies!

In functional medicine we believe that 30 different plants eaten per week are ideal for a healthy gut. A meal like this one packs 6 veggies in the dish and a few more options in toppings!
Ingredients:
1lb ground beef or turkey
2 Large sweet potatoes, cubed
1 medium yellow onion, diced
2 cloves garlic, minced
1 16oz can of diced tomatoes (regular or fire roasted)
1 4.5oz can of green chiles (or 1 green bell pepper)
2 tbsp olive oil
optional garnish: Avocado, cilantro, tomatoes, cheese, vegan cheese, tortilla chips
Taco seasoning:
1 tsp cumin
1 tbsp chili powder
3/4 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
Directions:
1. In a skillet heat the olive oil and add the diced onions. Cook for about 5 minutes until softened.
2. Add the garlic and stir for 1 minute
3. Add the beef or turkey and cook for about 8 minutes until completely cooked through. Then transfer to a plate and set aside
4. Add the sweet potatoes and 2 more tbsp of olive oil to the pan. These will be cooking until soft and lightly browned about 10 minutes.
5. While the potatoes are cooking prepare the taco seasoning.
6. When the potatoes are soft add the tomatoes, taco seasoning and chiles and allow to boil for 5 minutes. This helps dry up the water in the tomatoes.
7. Add the beef or turkey back into the pan mix well and serve! Garnish optional
