Fudge Brownie Cookies, Dairy & Gluten Free

Equipment

  • 1 Baking sheet
  • 3 Mixing bowls

Ingredients

Bowl 1

  • 3/4 C Flour, 1:1 Gluten free or regular all purpose if gluten isn't a concern
  • 2 tbsp Cocoa powder
  • 1 tsp Baking powder
  • 1/4 tsp Salt

Bowl 2

  • 1/4 C Vegan butter
  • 1 1/4 C Dark chocolate

Bowl 3

  • 2 Eggs
  • 1 C Coconut sugar or granulated sugar
  • 1/4 C Brown sugar or coconut sugar or granulated sugar

Fold in at the end

  • 1/2 C Mini chocolate chips, I used Enjoy Life brand they're dairy free

Instructions

  • Pre heat oven to 350F
  • Whisk together the ingredients in bowl 1 and set aside
  • Whisk together the ingredients in bowl 3 until fluffy and set aside
  • For bowl 2 melt the butter and chocolate together in the microwave in 30 second pulses, mixing in between until smooth
  • Pour bowl 3 (the egg mixture) into bowl 1 (the flour mixture) whisk together
  • Fold in bowl 2 (the melted chocolate and butter)
  • Fold in the chocolate chips
  • Use a cookie scooper to portion out about 15-18 cookies. Flatten them a little bit
  • Bake for 10-12 minutes. They will look slightly undone and allow to cool for a few minutes before eating
