Creamy Sausage & Peppers Pasta

Ingredients:
1lb ground sausage, pork or chicken
8oz Spaghetti, I used Jovial brand
2 Bell peppers, Red or Yellow
2 C Fresh Spinach
1/2 Onion
1 tbsp Olive oil
1 tbsp vegan butter
1 tsp Flour (all purpose gluten free)
1 C Chicken broth (if you don’t have a coconut allergy you can use that as well for a creamier sauce)
1/2 tsp Dijon mustard
Salt + Pepper to taste
Directions:
1. Boil water for pasta and prepare as directed on the package. Before draining save 1/4 C of pasta water
2. In a skillet brown the sausage and then remove it from the pan and set it aside
3. Using the same pan you used for the sausage add the olive oil, onion and peppers and cook for about 7 minutes until tender.
4. Add the butter and garlic. Once the butter has melted add the flour and mix well.
5. Add the broth (or coconut milk) and mustard mix well. Bring the mixture to a boil.
6. Add the sausage, spinach, pasta water and pasta. Mix well until all the pasta is coated and the spinach has wilted. Serve immediately
