Crunchy Tuna Salad without mayo

Egg and dairy free, High protein

Ingredients: Makes 2 servings
5 oz Tuna I used Wild Planet brand
3/4 of avocado, ripe
1/4 C fresh dill
1 C english cucumber diced small
1 tsp garlic powder
1/2 lemon juiced
salt and pepper
Optional: Arugula microgreens

Toast of your choice I used fresh sourdough

*For extra protein you can add 1/4 greek yogurt regular of vegan of your choice

Directions:
1. In a mixing bowl combine the tuna, avocado, garlic powder, lemon juice, salt and pepper.
2. Fold in the cumumber
3. Layer the bread with tuna mixture and microgreens and serve!
