One Pot Chili Beef & Mac, Dairy & Gluten Free

Ingredients: Makes 6 Servings

1 tbsp olive oil

1 lb ground beef or sirloin – you can also use ground turkey

1 yellow onion, diced

3 cloves garlic, minced

4 C low sodium chicken broth, I use Kitchen Basics

1 14.5oz can of diced tomatoes, no sodium added

3/4 C white kidney beans, rinsed and drained

3/4 C red kidney beans, rinsed and drained

2 tsp chili powder

1 1/2 tsp cumin

10oz elbow macaroni, I use Jovial brand which is gluten free and made out of rice, you can use any shape pasta

2 tbsp fresh parsley for garnishing before serving

Directions:

  1. In a large stock pot saute the olive oil, onions and beef until the beef is cooked. About 5 minutes
  2. Add the garlic and mix for 1 minute
  3. Add the broth, tomatoes, beans and seasonings.
  4. Add the pasta and bring to a boil. Reduce the heat to a simmer, cover the pot and cook for about 13-15 minutes until the pasta is cooked
  5. Serve with fresh parsley on top
