Dairy & Gluten Free, Budget Friendly Christmas Tomato Garlic Bruschetta

Ingredients:
2 Heads garlic, with the tops cut off
2 Pints cherry tomatoes- can often get a buy 1 get 1 free deal on these!
1 Shallot, peeled (optional) – sometimes shallots are expensive so you can skip if on a budget
1-2 C of Olive oil
(optional: fresh basil leaves or rosemary)
Salt & pepper
*All together this appetizer cost me less than $10. It was $1 for the garlic, $4 for B1G1 Free tomatoes and $4 for the crackers
Instead of bread we’re using Crunchmasters Crackers. They’re dairy and gluten free and full of healthy seeds!
Directions for dip:
1. Preheat oven to 400F
2. In a 9×9 pan add your tomatoes, garlic and shallot. Add olive oil until the tomatoes are almost covered. Sprinkle salt and pepper. Add herbs if using
3. Roast for 1 hour.
4. Let cool for 20-30 minutes. Squeeze the garlic out of the head and mix into the tomatoes. Serve!
