Gluten Free Pizza Hack

Ingredients:

2 C TruEats Pancake & waffle mix

1/4 C extra virgin olive oil

1/2 C water

Directions:

  1. Pre heat oven to 425F. Prepare a pizza pan or stone
  2. In a large mixing bowl combine the ingredients. Knead for about 2 minutes and allow the dough to rest for 5 minutes.
  3. Sprinkle flour on the pizza pan. Dip your hands in olive oil so they don’t stick to the dough and gently press the dough into the pan making an even pizza. Ideally it should be about 1/2” thick.
  4. Bake the dough for 10 minutes
  5. Remove the crust from the oven and add all your toppings. Return the pizza to the oven until the cheese has melted. (I use vegan cheese and it takes about 8 minutes)

*Note: If you’re making a vegetable pizza like mine be sure to cook the vegetables first in a skillet with olive oil about 10 minutes until softened before baking them on the pizza
