Gut Healthy Apple Pie Overnight Oats

Equipment

  • 2 16oz Jars
  • 1 Grater
  • 1 Small bowl

Ingredients

  • 2 Medium, apples (I used honeycrisp)
  • 1 C Rolled oats, gluten free
  • 2 tbsp Chia seeds
  • 1 C Coconut Kefir I used coconut kefir for extra probiotics but you can also use dairy free milk. Coconut kefir is thicker so it does change the consistency to a more creamy one
  • 2 Scoops Collagen peptides or vegan protein powder
  • 1 tsp Cinnamon
  • 1-2 tsp Pure maple syrup
  • 1/2 tbsp Granola butter, Sunflower butter or Nut butter I wiped mine around the glass jars so I could eat it in scoops with my oats but you can also mix it directly into the oats

Instructions

  • Wash and dry your apples. Grate them over a small bowl so you collect all the juice. Skin on is best but if you can't tolerate the skin peeled is fine also
  • If you're using the granola butter (nut butter) you can either streak it across the jar like I did or add to the bottom of the jar
  • In each jar pour 1/2 C oats, 2 tbsp grated apple, 1 tbsp chia seeds, 21 scoop collagen peptides or protein powder, 1/2 tsp cinnamon and 1 tsp maple syrup. Mix until combined
  • Fill the jars with coconut kefir about 1/2 C per jar
  • Cover and refrigerate the jars overnight
  • When I'm ready to eat them I like to top mine with coconut whipped cream for extra healthy fats or coconut yogurt and a sprinkle of cinnamon
