Gut Healthy Peach Cobbler

•Dairy free, gluten free, soy free, high protein• Can be made nut free with substitute
This recipe is gut healthy! No inflammatory ingredients if made gluten free and high fiber from the peaches and oats!
Ingredients:
5 C Peaches, fresh
1 C Rolled oats
2 Scoops protein powder I used pea protein (if you don’t want to use protein you can leave it out)
1 tbsp lemon juice
2 tbsp ground flaxseed or arrow root powder,or all-purpose flour regular or gluten free or corn starch (pick 1)
10tbsp pure maple syrup OR 2 tbsp + 1/4 C coconut oil
1 tbsp cinnamon
1/2 tsp salt
1 C Flour, almond or all-purpose
Directions:
1. Preheat oven to 350F
2. In a 9×9 baking pan pour the peaches, arrowroot, lemon juice, protein powder and 2 tbsp maple syrup. Mix well
3. In a separate mixing bowl mix the oats, , flour, salt, cinnamon and maple syrup (coconut oil if using) until it all looks wet and crumbly. Pour this mixture evenly on top of the berries . Bake for 35 minutes.
Lasts 5 days refrigerated!
** For extra protein, if you’re not dairy free, you can serve over greek yogurt
