High Protein Single Serve Apple Cinnamon Quinoa Bakes

Ingredients for 1 serving:

1/2 C quinoa flakes

1 large egg, I like pasture raised

1/2 C milk of your choice

1 tbsp pure maple syrup

1 tsp vanilla extract

1 tsp cinnamon

1/2 C diced apple

1 C yogurt of your choice *About 50% of the protein will be coming from the yogurt here are some options: Dairy free yogurt that’s mixed with a scoop of protein powder, dairy free yogurt that has protein already in it like Siggi’s. or if you’re not dairy free the high protein yogurt of your choice.

Directions:

  1. Preheat oven to 350F. Prepare a 7ox ramekin (Link to the one I use)
  2. In the ramekin add quinoa flakes, maple syrup, vanilla and cinnamon.
  3. Beat the egg in a separate bowl and add it to the ramekin
  4. Add the milk and stir until everything is combined
  5. Top with the chopped apples
  6. Bake for 25-30 minutes until a toothpick comes out clean.
  7. Allow the ramekin to cool for 20 minutes. Serve with 1 C yogurt and a sprinkle of cinnamon. You could also add pumpkin seeds for extra nutrients
