Happy Gut Apple Muffins

Ingredients:

2 C Oats, gluten free

8 Dates

1/2 C coconut oil, avocado oil or olive oil

1/4 C pure maple syrup

1-2 apples chopped

2 eggs

1 tsp baking soda

Pinch of salt

Pinch of cinnamon

*optional toppings: nuts, shredded coconut, nut butter, granola butter, sunflower butter or seeds

Directions:

  1. Preheat oven to 350F. Prepare a muffin pan with parchment paper baking cups
  2. Add all the ingredients (except the toppings) to a blender and combine until smooth
  3. Divide the batter into the cups and bake 15-18 minutes or until the center is cooked you can use a toothpick to check
