Chipotle Chicken Salad

Ingredients:
2 C rotisserie chicken, chopped
1/4 C celery (and extra if you like for dipping)
2 tbsp fresh cilantro, minced
1 lime, juiced
1/2 C chipotle mayo (you can use vegan mayo if egg free)
1/3 C roasted red peppers or red bell pepper
*I used Crunchmaster Mexican Street Corn Chips for this meal prep. They’re loaded with healthy seeds and made with olive oil!
