Pre heat oven to 425F. Line a baking sheet with parchment paper. Remove the pie dough from the refrigerator so it comes up to room temperature
Put your dates in warm water for 10 minutes to soften and then drain the water.
Peel and slice your apples
Make the date caramel by combining all the ingredients in a blender or food processor until smooth
Gently roll your pie dough out on the parchment paper.
Place a small bowl in the center of the dough (the one I used is about 4'' in diameter)
Spread the date caramel on the dough around the bowl
Lay the apples on top of the caramel. Don't overlap the apples because they won't cook all the way through.
Gently roll the edges of the dough upward to cover the edges of the apples
Remove the bowl from the center. Using a sharp knife cute the center vertically, horizontally and then into pizza slices. (please watch video for better explanation)
Take the point side of those slices and bend it backwards to cover the apples
Brush the dough with olive oil. Sprinkle turbinado sugar over the dough
Bake for about 24 minutes or until the dough is golden brown and crispy.
Serve with whipped cream or ice cream
